• 1 cucumber, peeled and cut into small cubes
  • 2 bell peppers, red & orange, cut into small cubes
  • 1 ear of white corn, cooked and kernel-ed (you’ll use the kernels)
  • 1 can of black beans, rinsed
  • 1 cup of chopped cilantro
  • 1/2 cup quinoa, cooked
  • 1/2 cup feta cheese (I used a spicy one made with sun dried tomatoes from my local farmer’s market. You can omit this if you want it to be vegan.)
  • juice of 1 lime
  • salt and freshly ground black pepper to taste

Throw all ingredients straight from the chopping board into a quart sized ziplock bag, shake it up and mix it around. Taste and adjust seasonings to your liking.
Spill it out into a serving bowl and enjoy (with tortilla chips or a spoon!!)
